Off the top of my head, I also love the Millhouse in Slane, Darver Castle in Louth, Ballybeg House in Wicklow, Ard na Sidhe in Kerry...I'm sure there are others but those are the ones that jump to mind as favourites both because they're beautiful locations and because the staff are really lovely too.
